We make our soba fresh in-house using buckwheat grown in Horokanai, carefully prepared with time-honored
craftsmanship.
Our soba broth follows a traditional recipe passed down from the very first generation, made generously with
Yaizu bonito flakes and Hidaka kelp, and carefully balanced with soy sauce, sugar, and mirin.
This rich, umami-forward broth brings out the full flavor of the soba.
Our wish is simple: to serve truly delicious soba in Sapporo.
That heartfelt commitment remains unchanged to this day.
