Founded as a local diner, Marucho Honke offers a wide range of dishes—from soba to udon, ramen and rice bowls — while always honoring the flavors at the heart of our soba.
Among them, our signature "soba-shop ramen" is made with the same savory broth that has been passed down since the very beginning.

Commitment

We make our soba fresh in-house using buckwheat grown in Horokanai, carefully prepared with time-honored craftsmanship.
Our soba broth follows a traditional recipe passed down from the very first generation, made generously with Yaizu bonito flakes and Hidaka kelp, and carefully balanced with soy sauce, sugar, and mirin.
This rich, umami-forward broth brings out the full flavor of the soba.

Our wish is simple: to serve truly delicious soba in Sapporo.
That heartfelt commitment remains unchanged to this day.
